i was wondering if anyone has read Tolkien's work on this which he did not include in his books.

Which books? I think there's one of the books in The History of Middle-earth where Tolkien talks about the Dagor Dagorath, etc. I'm pretty sure it wasn't in The Letters of JRR Tolkien.

Not exactly sure what you mean. Do you mean things like Leaf by Niggle and Farmer Guiles of Ham?
